When you think of pizza, typically a dessert doesn’t come to mind. However, this Apple-Scotch Pizza Dessert is sure to please any sweet tooth.
It’s as delicious as apple pie, but without a flaky pie crust since it’s made with corn flakes and baked in a 12-inch pizza pan. It has a definite hint of butterscotch flavor, and takes less time to bake than a regular apple pie.
The cookie-dough type crust is thin but not too sweet, and the apple, butterscotch chips, coconut and oatmeal filling make this a delightful dessert. An added surprise is what’s sprinkled on top with chopped nuts: shredded cheddar cheese.
This delicious combination can only be made better by adding a dollop of whipped cream or vanilla ice cream on each serving.
APPLE-SCOTCH PIZZA DESSERT
Dough:
1 1/4 cups regular flour
3/4 cup crushed corn flakes or corn flake crumbs
2 teaspoons sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/2-cup butter or margarine
1/2-cup dairy sour cream
Filling:
2 cups (1-pound, 5-ounces can) prepared apple pie filling
1/2 cup quick-cooking rolled oats
1/2 cup flaked coconut
1/2 cup butterscotch chips
1/2 teaspoon cinnamon
1/2 teaspoon salt
Topping:
1/2 cup shredded cheddar cheese
1/2 cup chopped nuts
In a medium-size mixing bowl, combine all filling ingredients, mix well. Set aside.
In a large mixing bowl, combine flour with crushed corn flakes, sugar, salt, baking powder and cinnamon. Cut in butter, until crumbly. Add sour cream and mix until moistened
Press dough evenly into a lightly greased 12-inch pizza pan to form crust. Bake crust in a 375-degree oven for 15 minutes until somewhat puffy.
Remove from oven; spread with filling. Sprinkle with cheddar cheese and nuts. Return to oven and bake for 20 minutes or until cheese is melted and crust is light golden brown.
Makes 10-12 servings. Serve warm or cool with or without a dollop of whipped cream or ice cream.
