With the spring season upon us now, most of us will be spending a lot more time outdoors enjoying the warmer, sunnier days. That means we will be looking for recipes that take a little less time to prepare so we can spend less time in the kitchen.
Here are two easy, yet tasty dessert ideas – Quick Cherry Cobbler and Double Chocolate Nut Bars. Both are easy and quick to make and will be a hit with your family.
QUICK CHERRY COBBLER
1 (21-ounce) can cherry fruit pie filling
1 cup biscuit mix (like Bisquick)
1/4 cup milk
1 tablespoon sugar, plus additional sugar to sprinkle over cobbler
1 tablespoon butter or margarine, softened
1 teaspoon vanilla
Spread pie filling in ungreased 1 1/2-quart casserole dish. Place in cold oven. Heat oven to 400 degrees; let pie filling heat 10 minutes.
While pie filling is heating, stir together remaining ingredients until soft dough forms. Remove casserole dish from oven and drop dough by 6 spoonsful onto warm pie filling.
Sprinkle with additional sugar to taste over cobbler. Bake 18 to 20 minutes or until topping is light brown. Makes 6 servings.
Note: You may replace cherry pie filling with peach, blueberry or any other favorite fruit pie filling.
DOUBLE CHOCOLATE NUT BARS
1 (18.25-ounce) package chocolate cake mix
1/4 cup vegetable oil
1 egg
1 cup chopped nuts
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
1 (6-ounce) package semisweet chocolate chips
1 teaspoon vanilla
Preheat oven to 350 degrees and grease a 13-by-9-inch baking pan. In a large mixing bowl, combine cake mix, oil and egg; beat at medium speed until crumbly.
Stir in nuts. Reserve 1 1/2 cups crumb mixture and press the remaining crumb mixture firmly on the bottom of prepared pan.
In a small saucepan over medium heat, combine remaining ingredients. Cook and stir until chips melt. Pour chocolate mixture evenly over prepared crust.
Sprinkle reserved crumb mixture evenly over top. Bake 25 to 30 minutes or until set. Cool. Cut into bars. Store loosely covered at room temperature. Makes 30 bars.
