4 big slicing tomatoes
1 box (both packages) loaded mashed potatoes mix
2 cups shredded cheddar jack cheese
Fresh ground black pepper & sea salt
Dried basil
Olive oil cooking spray
Preheat oven to 375 degrees; spray large baking sheet. Prepare both packages of mashed potatoes according to instructions and set aside to cool. Cut each tomato into 3/4-inch slices, season with salt and pepper and sprinkle with basil; place on baking sheet about an inch apart. Top each tomato with a generous scoop of mashed potatoes (I use an ice cream scoop) and spread to edges of tomato. Top with cheese and bake until warm and cheese is nice and melted, about 15 minutes.
