4 larg sweet potatoes, peeled, cut 1/4 cubes
3 tablespoons sweet Bavarian sweet mustard
3 tablespoons cider vinegar
2 tablespoons honey
1/2 cup liquid-coconut oil
2 cups diced celery
2 cups diced red or green peppers
salt and pepper to taste
4 tablespoons fresh chopped parsley
1/2 cup green onion or scallion
Steam potatoes cubes (6-8 minutes) until tender. Don’t overcook them. Whisk vinegar, mustard, honey. Add oil slowly until dressing emulsifies. Put potatoes in a large mixing bowl. Add peppers and celery, dressing, and salt and pepper. After salad cools, add onions and parsley. Serves 4-6.
