Savory Pork Chops and Rustic Cheddar Mashed Potatoes

Most of us grew up with two favorite dishes for dinner – fried pork chops and mashed potatoes – and many of us still have the meal in our regular rotation. If you’re looking for a little change of pace, though, you might try the following recipes for a new twist on the old standbys.

These Savory Pork Chops offer a little more zip than the fried pork chops you’re used to. You might also want to change up the standard mashed potatoes and gravy often served with pork chops and try these Rustic Cheddar Mashed Potatoes, which are great without gravy.

SAVORY PORK CHOPS

2 tablespoons all-purpose flour

1/4 teaspoon seasoned salt

1/4 teaspoon dry mustard

Dash of pepper

4 (1-inch-thick) pork loin chops

Vegetable oil

1/4 cup water

1/4 cup soy sauce

2 tablespoons ketchup

3 tablespoons orange marmalade

1 tablespoon of chopped green onions

Combine flour, seasoned salt, mustard and pepper in a small bowl, stirring well. Dredge chops in the flour mixture; cook in oil in a large skillet until browned on both sides. Remove the chops and discard drippings. Return chops to skillet.

Combine water and remaining ingredients; pour over chops. Bring to boil; cover, reduce heat, and simmer 20 minutes or until chops are tender, turning once. Makes 4 servings.

RUSTIC CHEDDAR MASHED POTATOES

(Slow-cooker method)

2 pounds russet potatoes, peeled and diced

1 cup water

1/3 cup butter, cut in small pieces

1/2 to 3/4 cup milk

1 1/4 teaspoons salt

1/2 teaspoon black pepper

1/2 cup finely chopped green onions

3/4 to 1 cup shredded cheddar cheese (depending on your preference)

Combine potatoes and water in a slow cooker; dot with butter. Cover and cook on high for 3 hours or on low for 6 hours or until potatoes are tender.

Using an electric mixer on medium setting, whip potatoes until well blended. Add milk, salt and pepper and whip until well blended.

Stir in green onions and cheese. Cover tightly and let stand 15 minutes to allow flavors to blend and cheese to melt.
