Pork Tenderloin with Mushroom Sauce and Ranch Potato Cubes

Mushrooms add something special to many dishes, and this Pork Tenderloin with Mushroom Sauce is no exception. It’s a breeze to make and tastes great.

You can make the meal even more enjoyable by serving these Ranch Potato Cubes with it. Just add your favorite vegetable or side salad, and you’ll have a delightful meal!

PORK TENDERLOIN WITH MUSHROOM SAUCE

1 pork tenderloin (1 1/4 pounds)

2 tablespoons butter

1 tablespoon olive oil

1 garlic clove, minced

1 1/2 cups sliced fresh mushrooms

1/4 cup A-1 Sauce

1 tablespoon Worcestershire Sauce

1/4 cup white wine or beef broth

1 tablespoon Soy Sauce

1/4 teaspoon garlic salt

1/4 teaspoon black pepper

2 tablespoons brown sugar

Preheat oven to 325 degrees. Place pork loin in an oblong baking pan and set on the center oven rack and roast for 40-45 minutes, until the internal temperature is 160 degrees. Remove pork loin from oven and let stand.

To prepare the mushroom sauce, melt butter and oil in a small, hot skillet over medium heat. Add the minced garlic and the sliced mushrooms and saute until tender.

Mix together the A-1 sauce, Worcestershire Sauce, wine pr beef broth, soy sauce, garlic salt, black pepper and brown sugar.

Add the sauteed garlic and mushrooms to the A-1 Sauce mixture. Cover the pork loin with the mushroom sauce mixture and return to the oven for an additional 5-10-minutes.

To serve, place the pork loin on a deep platter and pour the sauce over and around it. Makes 4-6 servings.

RANCH POTATO CUBES

5 to 7 medium potatoes, cut into 1/2-inch cubes

1/4 cup butter, cubed

1 cup (8 ounces) dairy sour cream

1 envelope of your favorite ranch salad dressing mix

1 cup (4 ounces) shredded cheddar cheese

Place potatoes in greased 11-by-7-inch baking dish; dot with butter. Cover and bake at 325 degrees for 1 hour or until potatoes are tender.

Combine sour cream and salad dressing mix; spoon over the potatoes. Sprinkle with shredded cheese and bake, uncovered, for 5-10 minutes or until cheese is melted. Makes 6-8 servings.
