Autumn is upon us now and there are so many chores that keep us outdoors now that the weather has cooled. That’s when the handy slow cooker comes in handy. This Pepsi Pot Roast recipe gives your ordinary pot roast a new twist that is quite tasty. If you’d like something sweet after dinner, this recipe for Apricot Bars might become your new favorite.
Pepsi Pot Roast
1 (3 pound) pot roast
2 (10 3/4 ounces) can mushroom soup
1 envelope of dry onion soup mix
2 (16 ounces) bottles Pepsi Cola (or other brand of cola can be used)
Place meat in a slow cooker.
In a large bowl mix together mushroom soup, dry onion soup mix and cola. Pour over roast in cooker.
Cover. Cook on high 6 hours.
Note: If you desire to include carrots and potatoes with your roast. You may add 2 cups of quartered and skinned potatoes and 1 cup of washed baby carrots during the last hour of cooking.
Makes about 8 servings.
Apricot Bars
1 cup brown sugar, packed
3/4 cup butter
1 3/4-cups all-purpose flour
1 1/2-cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small jar of apricot preserves
Mix first six ingredients together in a bowl until crumbly.
Divide mixture in half. Pat half of mixture into a well-greased 9x13-inch baking pan.
Spread the apricot preserves over mixture.
Top with remaining crumb mixture and gently pat down.
Bake at 350 degrees for about 25-30 minutes or until lightly browned.
Cool and cut into bars.
