In today’s busy world, we often look for dessert recipes that are quick to prepare, especially if we’re already spending a lot of time making the dinner. These recipes for Peaches ‘N’ Cream Cheese Pie and Saucy Cherry Enchiladas are not only easy to make, but also delicious.
The pie offers the best tastes of a peach pie and a cheesecake. Plus, there is no pie crust to prepare.
The Saucy Cherry Enchiladas are a snap to make since you use prepared tortillas. They taste great, too!
PEACHES ‘N’ CREAM CHEESE PIE
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons margarine or butter
1 small box vanilla pudding
1 egg
1/2 cup milk
1 (15-ounce) can sliced peaches, drained (save juice)
1 (8-ounce) package cream cheese, softened
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon sugar
1. Beat flour, baking powder, salt, margarine, dry pudding, egg and milk together for 2 minutes.
2. Pour into 9-inch pie plate.
3. Place drained peaches over batter.
4. Combine cream cheese with sugar and 3 tablespoons peach juice and beat for 2 minutes.
5. Spoon over peaches. Combine cinnamon and sugar and sprinkle over pie.
6. Bake for 30-35 minutes at 350 degrees. Makes 6 to 8 servings.
SAUCY CHERRY ENCHILADAS
2 cups sugar
1 1/2 cups water
1 cup butter, cubed
2 tablespoons lemon juice
1 (21-ounce) can cherry pie filling
7 to 8 (6-inch) flour tortillas
1 cup chopped pecans or other nuts
1 teaspoon ground cinnamon
Vanilla ice cream or whipped cream or whipped topping (optional)
1. In a large saucepan, bring the sugar, water, butter and lemon juice to a boil over medium heat. Reduce heat; simmer, uncovered, for 30 minutes or until mixture has the consistency of syrup. Remove from heat and set aside.
2. Spoon about 3 tablespoons of pie filling off-center on each tortilla; fold sides and ends over filling and roll up. Place in a greased 9-by-13-inch baking dish. Pour sugar syrup over tortillas; let stand at room temperature for 30 minutes.
3. Bake, uncovered, at 350 degrees for 30 minutes. Sprinkle with nuts and cinnamon. Bake 15 minutes longer or until golden brown and sauce bubbles around the edges. Serve warm with ice cream, whipped cream or whipped topping, if desired. Makes 7 to 8 servings.
Note: Apple, strawberry or blueberry pie filling can be substituted.
