Beef Stroganoff Casserole, Quick Dinner Rolls

On busy autumn days, it’s nice to have a casserole recipe that is tasty and easy to prepare for your family’s dinner.

This Beef Stroganoff Casserole is one such recipe. It’s quick to make and so flavorful.

Make these Quick Dinner Rolls to serve with the casserole, along with your favorite vegetable, and you’ll have a great meal ready in no time!

BEEF STROGANOFF CASSEROLE

1 pound lean ground beef

1/4 teaspoon salt

1/8 teaspoon black pepper

1 teaspoon vegetable oil

8 ounces sliced mushrooms

1 large onion, chopped

3 cloves garlic, minced

1/4 cup beef broth

1 (10 3/4-ounce) cans condensed cream of mushroom soup, undiluted

1 cup sour cream

1 tablespoon Dijon mustard

4 cups cooked egg noodles

Chopped fresh parsley for garnish (optional)

Preheat oven to 350 degrees. Spray a 13-by-9-inch baking dish with nonstick cooking spray.

Place beef in large skillet; sprinkle with salt and pepper. Brown beef over medium-high heat until no longer pink, stirring to separate. Drain fat from skillet; set beef aside.

Heat oil in same skillet over medium-high heat until hot. Add mushrooms, onion and garlic; cook and stir 2 minutes or until onion is tender.

Add broth. Reduce heat to medium-low and simmer for 3 minutes.

Remove from heat; stir in soup, sour cream and mustard until combined. Return beef to skillet.

Place noodles in prepared dish. Pour beef mixture over noodles; stir until noodles are well coated.

Bake, uncovered, 30 minutes or until heated through. Sprinkle with chopped parsley, if desired. Serves 6.

QUICK DINNER ROLLS

1 package dry yeast

1 cup warm water (not hot)

2 tablespoons sugar

2 1/4 cups flour, divided

1 teaspoon salt

1 egg

2 tablespoons shortening

In a large mixing bowl, dissolve yeast in warm water. Stir in sugar, half of the flour and salt into yeast.

Beat with a spoon until smooth. Add egg and shortening and beat in rest of the flour until smooth.

Cover with a cloth and let rise for 30 minutes. Be sure kitchen is warm.

Grease a 12-muffin-cup baking pan. Stir down dough and spoon into muffin cups filling them half full.

Let rise (covered with a cloth) for 30 minutes and then bake in 400 degrees for 15 to 20 minutes.

Brush tops with melted butter after baking.
