2 cups peanut butter
1/2 cup Truvia Brown Sugar Blend
2 tablespoons ground Chia seed
4 tablespoons water
1 teaspoon vanilla extract
1 cup dark chocolate chips (optional)
Preheat oven to 350 degrees. In a small cup, mix chia seeds and water together
and let sit while mixing other ingredients. Combine peanut butter, brown sugar and vanilla; mix till well blended. Add chia mixture and mix thoroughly. Add chocolate chips. Drop by tablespoonfuls onto baking sheet and bake 2-3 minutes until golden brown. Allow to sit on the cookie sheet and cool to set up. (They may not look done, but the heat of the cookie sheet will continue to cook them while still allowing them to stay soft and chewy.)
