Small batch
8 cups flour (all-purpose, whole wheat or combination of half and half)
1/4 cup plus 1 tablespoon baking powder
2 teaspoons salt
1 cup nonfat dry milk powder
1 1/2 cups shortening
Combine dry ingredients in large bowl. Sift���� to assure even distribution of ingredients. Using a pastry cutter, incorporate the shortening until mix is the consistency of cornmeal.
Makes 11 cups.
Large batch
5 pounds flour (all-purpose, whole wheat or combination of half and half)
3/4 cup baking powder
2 tablespoons salt
2 1/2 cups nonfat dry milk powder
3 3/4 cups shortening
Follow same instructions for small batch.
If making the large batch, you can save time if you have a large electric mixer and whisk attachment.
Makes 27 cups.
