During the week of Jan. 11, the Jefferson County Health Department inspected 41 food establishments. Scores ranged from 79 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of Jan. 11 are listed below. They are all routine inspections unless otherwise noted.
■ American Legion Post 253 clubroom/bar, 849 American Legion Drive, Festus, was inspected on Jan. 14. No score was given due to low priority.
■ American Legion Post 253 downstairs kitchen, 849 American Legion Drive, Festus, scored 81 on Jan. 14. Violations: slimy residue inside ice machine on deflector plate; incorrect sanitizer solution; unlabeled spray bottle; Pepto-Bismol stored above ready-to-eat foods in refrigerator; and raw fish thawing in hot water.
■ Baymont by Wyndham breakfast kitchen, 1200 W. Gannon Drive, Festus, scored 79 on Jan. 15. Violations: no staff with manager food safety certification; no soap at hand sink; food debris in microwaves; two unlabeled spray bottles; box of hot cocoa mix stored on floor; unwrapped single serve utensils stored incorrectly; box of paper towels and cups stored on floor; broken gaskets on refrigerator; and liquid and debris inside refrigerator.
■ Big River Pizza Co., 6710 Mall Drive, Cedar Hill, scored 79 on Jan. 13. Violations: expired manager food safety certificates; cigarette carton stored on prep table; two sinks in poor repair/sinks not draining properly; lighting fixtures with holes; items stacked wet; damaged gasket on freezer; soiled dishwashing machine; broken door plate/ceiling tiles need replacement; and wet mop drying on floor.
■ Captain D’s, 35 Walters Place, House Springs, scored 88 on Jan. 14. Violations: one manager didn’t have manager food safety certification; broken thermometer in cooler; torn door gaskets/ice buildup in walk-in freezer; ice machine door soiled; missing grout on tiles; and dusty air vents/peeling ceiling tile.
■ Casa Charro, 100 S. Truman Blvd., Crystal City, scored 97 on Jan. 12. Violation: unlabeled spray bottle.
■ Cheese Steaks, 518 Bailey Road, Crystal City, scored 100 on Jan. 14.
■ Dollar Tree, 3890 Jeffco Blvd., Arnold, was inspected on Jan. 15. No score given due to low priority.
■ Dunkin Donuts, 900 Jeffco Blvd., Arnold, scored 93 on Jan. 16. Violations: no paper towels at two hand sinks; ice machine scoop improperly stored; hand sink leaking; ice cream prep top soiled; and no covered trash can in restroom.
■ Fazoli’s, 123 Arnold Crossroad Center, Arnold, scored 91 on Jan. 15. Violations: incorrect temperature of food in cooler (cooler was accidentally shut off); scoop handle in contact with cheese in prep top; walk-in freezer soiled with debris and ice buildup on pipes; and dusty air vents.
■ First United Methodist Church Food Pantry, 113 Grand Ave., Festus, was inspected on Jan. 13. No score given due to low priority.
■ Fox Food Service warehouse, 849 Jeffco Blvd., Arnold, was inspected on Jan. 15. No score given due to low priority.
■ Gordon’s Stoplight, 500 Bailey Road, Crystal City, scored 100 on Jan. 13.
■ Grind Coffee Co., 4561 Gravois Road, House Springs, scored 80 on Jan. 16. Violations: two staff without basic food safety certification; scoop handles stored in toppings; two compartments of sink leaking into bucket; and improper backflow prevention on dish sink.
■ Hillsboro Treatment Center, 10434 Hwy. BB, Hillsboro, scored 100 on Jan. 15.
■ Imo’s Pizza, 600 Jeffco Blvd., Arnold, scored 88 on Jan. 14. Violations: several staff with expired basic food safety certificates; soiled can opener blade and ice machine interior; prep top at improper temperature; soiled hood vent; and dirty employee restroom.
■ Imperial Bowl, 6045 W. Outer Road, Imperial, was reinspected on Jan. 14. No score given.
■ Jeffco Fuels, 3700 Jeffco Blvd., Arnold, scored 100 on Jan. 15.
