During the week of Oct. 19, the Jefferson County Health Department inspected 44 food establishments. Scores ranged from 57 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of Oct. 19 are listed below. They are all routine inspections unless otherwise noted.

■ Cedarhurst, 2069 Missouri State Road, Arnold, scored 99 on Oct. 22. Violation: top of dish machine soiled.

■ Community Improvement Association of Jefferson County, 13468 Hwy. JJ, De Soto, scored 97 on Oct. 24. Violations: rat droppings behind and between kitchen equipment.
■ Dave’s Diner, 2823 High Ridge Blvd., High Ridge, scored 86 on Oct. 22. Violations: no soap at hand sink; dead insects in light guard; pans stacked wet; ice buildup on walk-in freezer evaporation unit; soiled hood filters/walk-in cooler ceiling; and defunct ice machine stored in facility.
■ Dave’s Diner, 1059 Gravois Road, Fenton, scored 78 on Oct. 22. Violations: hand sink out of order; no paper towels at hand sink; breaker had flipped off on steam hot holding unit; walk-in cooler in disrepair and at 52 degrees; pans stacked wet; and hole in wall near door.
■ Dierberg’s Deli, 860 Arnold Commons Drive, Arnold, scored 97 on Oct. 21. Violations: bugs in light guards; soiled gaskets on cooler; and dust buildup on ceiling registers.
■ Dough Depot, 216 Market St., Kimmswick, scored 91 on Oct. 22. Violations: dented can; and pizza prep station foods holding at unsafe temperature.
■ Dynasty Mann, 2821 Williams Creek Road, High Ridge, scored 98 on Oct. 25. Violations: dirty knife; and scoop handle down in flour.
■ Festus Manor, 627 Westwood Drive, Festus, was reinspected on Oct. 21. No score given.

■ Holties Restaurant and Pub, 1374 Old Hwy. M, Barnhart, scored 92 on Oct. 21. Violations: incorrect sanitizer in dish machine; uncovered food containers in freezer; and black mold-like substance in area behind dish machine with peeling paint.
■ Ingram’s Market, 3812 Hwy. Z, Festus, scored 83 on Oct. 21. Violations: employee drink cup with no lid on counter; improper handwashing by an employee; no paper towels at hand sink; food debris in microwave; gap between doors/window in restroom open; wet wash cloths stored improperly; scoop handle down in sugar; creamer tubes not cut diagonal; single-serve cups stored on floor; and broken gaskets.
■ Jack in the Box, 5300 Caroline Drive, High Ridge, scored 97 on Oct. 22. Violation: box cutters on prep table.
■ Jack in the Box, 1197 Scenic Plaza Drive, Herculaneum, scored 97 on Oct. 23. Violations: torn gaskets on several coolers; grease buildup on pipes near cook-line fryer and inside two fryers; and large crack in wall, floor and ceiling at walk-in cooler where outdoor air is coming in/unsealed wall covering/missing grout.
■ Joe’s Pizza, 1185 Scenic Plaza Drive, Herculaneum, scored 78 on Oct. 23. ■ Pastime Club, 5557 Hwy. 61-67, Imperial, was inspected on Oct. 20. No score given due to low priority.
■ Pine Valley at the Woodlands, 620 Woodlands Meadows Drive, Arnold, scored 85 on Oct. 21. Violations: dented can; sanitizer dispenser not working; table can opener blade soiled; torn gaskets on cooler; and food debris in utensil drawers/soiled microwave.
