During the week of May 11, the Jefferson County Health Department inspected 46 food establishments. Scores ranged from 59 to 100. All inspections for the week were routine and unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of May 11are listed below. They are all routine inspections unless otherwise noted.
■ Applebee’s Grill & Bar, 1110 Big Bill Road, Arnold, scored 100 on May 12.
■ Bellacino’s, 3484 Jeffco Blvd., Arnold, scored 97 on May 13. Violation: dusty vents on side of ice machine.
■ Brain Station, 450 Bailey Road, Crystal City, scored 100 on May 13.
■ Captain D’s, 35 Walters Place, House Springs, scored 96 on May 14. Violations: rusting and peeling wire shelves in hush puppy cooler; debris in walk-in cooler; dust buildup on ceiling and outside grill hood; and ice buildup in walk-in freezer.
■ Casa Charro, 100 S. Truman Blvd., Crystal City, scored 59 on May 12. Violations: no staff member with manager food safety certificate; incorrect sanitizer solution; salsa and orange juice stored above appropriate temperature; cleaning spray stored next to pan of cornbread; unlabeled bottles of cleaning liquid; back screen door in disrepair; unsealed bag of sugar; wet wiping cloth not stored in sanitizer bucket; single-serve cup with no handle being used as scoop; hand sink not sealed to wall; cracked lid on food container; cracked container with prepped green peppers; leaking drain on hand sink; pile of tiles outside in a fenced-in area; unused equipment stored outside by back door; and water-damaged ceiling tile/painted floor chipping/wall and coving near cooler in disrepair/part of door frame missing.
■ Children’s Learning Center, 2713 Capetown Village Road, High Ridge, scored 97 on May 14. Violation: metal debris on can opener.
■ Circle K, 1199 Scenic Drive, Herculaneum, scored 98 on May 14. Violations: atmospheric backflow device leaking on mop sink; and mildew growth on mop sink caulking.
■ Cota Coffee, 4404 Ridge Drive, High Ridge, was inspected on May 16. No score was given due to low priority.
■ Coyol Mexican Bar & Grill, 12967 Hwy. 21, De Soto, scored 76 on May 16. ■ Dollar General, 13200 Hwy. JJ, De Soto, was inspected on May 13. No score given due to low priority.

■ Dynasty Manna, 2821 Williams Creek Road, High Ridge, scored 93 on May 15. Violations: hand sink blocked by table and baskets; multiple containers of food without date mark; and untreated wood around doors.
