During the week of June 22, the Jefferson County Health Department inspected 38 food establishments. Scores ranged from 37 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.

Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.

According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:

■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.

■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.

■ One point for core violations related to general sanitation and good retail practices.

■ Two points for repeat violations of any type.

Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.

He said a couple of priority violations are more concerning than several core violations.

In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.

Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of June 22 are listed below. They are all routine inspections unless otherwise noted.

■ 21 Rock Grill and Bar, 16 Meramec Heights, Arnold, scored 89 on June 23. Violations: prep top and reach-in cooler at incorrect temperature; and no dates marked on cooked cheese, lettuce and au jus.

■ Arby’s, 1199 McNutt St., Herculaneum, scored 98 on June 25. Violations: inoperable light in walk-in cooler; and soiled wall knife holder.

■ Britton’s Quick Shop, 8730 Hwy. 21, Hillsboro, scored 85 on June 24. Violations: incorrect temperature in walk-in cooler; unlabeled spray bottle with water; spider webs and spider inside soda fountain cabinet; floor damaged near walk-in cooler/walk-in cooler leaking water from evaporator fan box; untreated wood in walk-in cooler/wood used between hand dryer and wall in restroom; and debris buildup around soda nozzles and under counter of slushie machine.

■ Connect Church STL, 1779 Springdale Blvd., Fenton, was inspected on June 25. No score given due to low priority.

■ Coyol Mexican Bar and Grill, 12967 Hwy. 21, De Soto, was reinspected on June 23. No score given.

■ De Soto Head Start, 3225 Baisch Drive, De Soto, scored 100 on June 23.

■ Dollar General, 424 N. Main St., was inspected on June 23. No score given due to low priority.

■ Festus-Crystal City Elks Lodge Snack Bar pool, 4 Elks Drive, Festus, was inspected on June 25 and reinspected on June 26. No score given due to low priority.

■ Four Lakes Restaurant and Event Center, 5925 Plantation Drive, Hillsboro, scored 37 on June 25 and was reinspected on June 26. Violations: no soap at hand sink; no paper towels at hand sink; moldy noodles and Carolina reaper cheese in reach-in cooler (possibly an employee’s food), raw eggs stored above butter in cooler; dishwasher not dispensing sanitizer properly; several foods such as bacon, steaks, pork steaks, chicken, sour cream above safe temperature; no date marked on coleslaw, chicken wings, potatoes and noodles; meat sauce past use-by date; cooler drawers not maintaining a safe temperature; unlabeled flour and salt containers; mouse droppings around wall near deep freezer, in the dish area and around unused heat cabinet in back; box of Guiness stored under hand sink/boxes of food stored on floor of walk-in cooler and freezer; sanitizer cloth not stored in bucket; spoon submerged in salad dressing; single-use napkins and cup boxes stored on floor in back storage area; debris buildup on floor in walk-in cooler, inside of cooler, cooler drawers, inside and around non-functioning steam table and deep freezer; almost no water pressure in hand sink; debris buildup on floor under and behind equipment and in front of grill line/dust buildup on ceiling vent over conveyer oven. The reinspection report states “all violations from routine inspection were corrected at re-inspection. Facility was approved to reopen (after voluntarily closing). Note: It was suggested to the person in charge to switch to high temperature sanitizer in the dishwasher to keep from the dilution of the sanitizer. Unused hot holding cabinet had evidence of rodent activity, the hot holding unit was removed from facility to be discarded.”

■ Granny Franny’s Diner, 3191 Flucom Road, De Soto, scored 97 on June 23. Violations: wiping cloth bucket had no sanitizer; detached steel plating at walk-in cooler step; and food debris on shelving under bread in walk-in cooler/soiled fans.

■ Great Peking, 669 Jeffco Blvd., Arnold, had a field visit on June 25. Manager asked for more time to complete manager food safety exam and given until July 21.

■ Great Western Dining at Jefferson College, 1000 Viking Drive, Hillsboro, scored 99 on June 23. Violation: missing or broken ceiling tiles.

■ Imperial Bowl, 6045 West Outer Road, Imperial, scored 47 on June 25. Violations: employee moved from the register to putting on gloves without washing hands; broken paper towel dispenser; beer bottle caps in hand sink in the bar; soiled can opener blade; nacho cheese at incorrect temperature; observed tomatoes, chili and lettuce in refrigerator with no date marked; hot dogs past discard date; Lysol stored over single-use containers; can opener mounted on unfinished wood; dull can opener blade; no sanitizer test strips for dishwasher; debris buildup in concession stand reach-in cooler, container that holds nacho chips and inside freezer (with ice buildup); and stained ceiling tiles.

■ Jefferson R-7 Little League, 210 Vinyard Ave., Festus, was inspected on June 26. No score given due to low priority.

■ Joe’s Pizza, 1185 Scenic Plaza Drive, Herculaneum, scored 97 on June 26. Violations: no food safety certificates for staff; wet wiping cloth on prep table; and torn gasket on walk-in cooler.
