During the week of Dec. 28, the Jefferson County Health Department inspected 11 food establishments. Scores ranged from 76 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.

Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.

According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:

■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.

■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.

■ One point for core violations related to general sanitation and good retail practices.

■ Two points for repeat violations of any type.

Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.

He said a couple of priority violations are more concerning than several core violations.

In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.

Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of Dec. 28 are listed below. They are all routine inspections unless otherwise noted.

■ Eagle Mart, 7017 Hwy. 61-67, Barnhart, scored 78 on Dec. 30. Violations: no paper towels at hand sink; soiled soda nozzles/debris buildup in oven; gravy container cooling improperly; gaps in front doors; soda bag stored on floor; wet cloth stored on freezer; unwrapped single-serve utensils in incorrect directions; light fixture in a walk-in cooler with water pooling; ice buildup in walk-in freezer that is spreading to walk-in cooler; walk-in cooler and freezer floor breaking up; and dust on wall/grease buildup on wall by oven.

■ Grand Slam Sports Bar and Grill, 519 Mae Court, Fenton, was reinspected Dec. 31. No score given.

■ Great Peking, 669 Jeffco Blvd., Arnold, scored 85 on Dec. 31. Violations: incorrect sanitizer solution; two large bowls of rice cooling improperly; wok line soiled with grease and food debris/soiled prep top and shelf/dusty fan/cans of food with food debris; and large amount of employee’s personal items stored near unused ice machine in kitchen.

■ Happy Wok, 3916 Vogel Road, Arnold, scored 88 on Dec. 31. Violations: no dates on cooked chicken, rice and lettuce in walk-in cooler; rice cooling improperly; several cockroaches in kitchen; and several wiping clothes stored on counters.

■ Holiday Inn Express and Suites, 1802 Gamel Cemetery, Festus, scored 100 on Dec. 29.

■ Jimmy John’s, 1300 Veterans Parkway Suite 106, Festus, was reinspected Dec. 29 and had a field visit Dec. 30. No score was given Dec. 29. Notes on field visit say maintenance is scheduled to fix sanitizer dispenser.

■ North Jefferson Eagles Aerie, 2911 High Ridge Blvd., High Ridge, was inspected Dec. 31. No score given due to low priority.

■ Northwest Lions Care at Murphy Elementary, 2101 Valley Drive, High Ridge, was inspected Dec. 29. No score given due to low priority.

■ Shamrock Donuts, 1901 Richardson Road, Arnold, scored 76 on Dec. 30. Violations: no paper towels at hand sink; hand sink blocked by bottle/container; rolling pins, doughnut cutters and other utensils on shelf soiled with flour; unlabeled spray bottles; dead bugs in light guards; tongs stored on soiled container; soiled with debris: dough proofer, mixer, icing table, hot hold cabinet, fryer, griddle, vent hoods, container, sheet pan rack and reach-in cooler; soiled employee toilet and kitchen prep sink; soiled shelf, box fan, floor, walls and prep sink; and dusty ceiling vents.

■ Tiny Spouts Daycare, 9 Mark Drive, Fenton, was inspected Dec. 29. No score given due to low priority.
