1 cup lentils

3 cups water

1/2 medium onion, finely chopped

1 teaspoon black pepper, finely ground

1 teaspoon dried basil or a few fresh leaves

3 large ripe tomatoes, chopped

1 stalk celery, finely chopped

Cook lentils in water for 30 minutes with onion, basil and black pepper.

Add tomatoes and celery, cook for additional 15 minutes.
