Smoked Sausage and Baked Bean Casserole, plus Microwave Cherry Crisp.

Warmer weather usually means we’re spending more time outdoors, whether working in the yard or garden or just watching our children or grandchildren play outside. When it’s time to come inside and fix a meal, it’s nice to have something quick and easy to make.

This Smoked Sausage and Baked Bean Casserole is one such recipe, as is this recipe for Microwave Cherry Crisip. Both recipes are so tasty you’ll want to make the even year-round.

SMOKED SAUSAGE AND BAKED BEAN CASSEROLE

1/2 cup chopped onion

1 tablespoon butter

2 teaspoons vegetable oil

1 pound fully cooked smoked sausage, cut into 1/8-inch slices

1 (28-ounce) can pork and beans

1 cup ketchup

2 tablespoons Worcestershire sauce

1 tablespoon steak sauce

1 tablespoon brown sugar

In a large skillet, saute the onion in butter and oil until tender. Add sausage and cook for 2 to 3 minutes, stirring occasionally. Stir in the remaining ingredients.

Bring to a boil and then reduce heat. Cover and simmer for 10 minutes or until heated through.

Note: Kielbasa or Polish sausage may be substituted for smoked sausage. Makes 4 servings.

MICROWAVE CHERRY CRISP

1 (21-ounce) can cherry pie filling

1 teaspoon lemon juice

1 cup all-purpose flour

1/4 cup packed brown sugar

3/4 teaspoon ground cinnamon

1/4 teaspoon ground allspice

1/3 cup cold butter or margarine

1/2 cup chopped walnuts

Vanilla ice cream or whipped topping (optional)

Combine the pie filling and lemon juice in an ungreased 1 1/2-quart microwave-safe dish; set aside.

In a small bowl, combine flour, brown sugar, cinnamon and all allspice. Cut in butter until mixture resembles coarse crumbs; add chopped walnuts. Sprinkle over filling.

Microwave, uncovered, on high for 5-6 minutes or until bubbly. Serve warm with or without ice cream or whipped topping. Makes 4 servings,

Note: If you prefer, you may use other fruit pie fillings, such as strawberry, blueberry or peach.
