Shrimp Linguine and Apple Crisp

Seafood is a great alternative for dinner, offering a change from the typical meals of beef, chicken or pork. This Shrimp Linguine recipe is a little different because it’s not served as a hot dish. It’s also easy to make, and is filling and delicious.

After your dinner, you may like a nice Apple Crisp dessert. With apple season here, it’s a great time to make the sweet treat to top off your meal.

SHRIMP LINGUINE

1 1/2 cups prepared Ranch salad dressing (your choice of brand)

1/4 cup dairy sour cream

1/4 cup grated Parmesan cheese

1/2 pound linguine, cooked and drained

1/2 pound cooked shrimp, shelled and deveined

1/2 cup cooked peas

Additional Parmesan cheese (optional)

In a small bowl, combine salad dressing, sour cream and Parmesan cheese. In a large bowl, toss linguine with dressing mixture, shrimp and peas.

Divide equally among 4 to 6 plates and sprinkle with additional Parmesan cheese, if desired. Makes 4 to 6 servings.

APPLE CRISP

5 cups Golden Delicious Apples, peeled and sliced

1/2 cup sugar

1/2 cup butter or margarine

3/4 cup quick-cooking rolled oats

1/2 cup un-sifted all-purpose flour

1/2 cup sugar

1/2 cup chopped nuts (almonds or pecans)

Combine apple slices and 1/2 cup sugar in bottom of a 2-quart casserole dish. Mix butter, oats, flour, 1/2 cup sugar and nuts. Sprinkle butter and oat mixture over apples.

Bake in a preheated 350-degree oven for about 1 hour or until topping is browned and apples are tender.

Serve warm. May be topped with a scoop of ice cream or whipped topping. Makes about 4 to 5 servings.

Note: Any type of fresh apples will work as well.
