Most of us grew up on peanut butter and jelly sandwiches, but this recipe is a new take on that old favorite. If you would like a little something sweet to go with your morning coffee and newspaper, these Peanut Butter-Jelly Twists are a great pastry for breakfast or even a snack with a glass of milk for youngsters.
If you crave something sweet for breakfast but do not have time to make a pastry, try this Broiled Cinnamon Toast recipe. It is fast, easy and delicious!
PEANUT BUTTER-JELLY TWISTS
2 1/4 cups all-purpose flour
1 package active dry yeast
1/2 cup milk
1/4 cup sugar
3 tablespoons butter or margarine
1 egg
1/3 cup peanut butter
1/3 cup strawberry or favorite red jam or preserves
1 tablespoon butter, melted
For frosting:
1/2 cup Pillsbury or other brand vanilla canned frosting
1 heaping tablespoon peanut butter
In a large mixer bowl, combine 1 cup of the flour and the yeast. Heat milk, sugar, butter and 1 teaspoon salt until warm (115-120 degrees), stirring to melt butter. Add to dry mixture, add egg and beat at low speed with mixer for 30 seconds, scraping the bowl. Beat 3 minutes at high speed. Stir in remaining flour and beat well. Cover and then let rest for half an hour. Roll dough to 16-by-10-inch rectangle. Spread peanut butter over half lengthwise; spread jam on top. Fold to make 16-by-5-inch rectangle; seal edges. Cut crosswise into 1-inch strips. Loosely twist each; arrange in greased 11-by-7 1/2-inch baking dish. Brush with melted butter Cover; let rise until double (about 1 1/4 hours.) Bake at 375 degrees for 15-20 minutes. While still warm, smooth frosting over each twist. Makes 16 twists.
To make the frosting, combine both ingredients and beat until smooth and creamy.
BROILED CINNAMON TOAST
2 teaspoons sugar
1/4 teaspoon cinnamon
4 slices white or whole wheat bread
4 teaspoons margarine or butter
Heat broiler. In a small dish, combine sugar and cinnamon. Mix well. Place bread on ungreased cookie sheet. Broil 4 to 6 inches from heat for 1 to 2 minutes or until lightly toasted; turn bread. Spread each bread slice with 1 teaspoon margarine; sprinkle with sugar mixture. Broil 4 to 6 inches from heat for 1-2 minutes until lightly toasted. Serve immediately. Makes 4 slices.
