1/4 cup of cooked veggies, such as broccoli, carrots and cauliflower
1 cup flour
1 teaspoon of baking powder
1/2 teaspoon of salt
1 cup milk (or water)
1 egg
1 tablespoon of oil
Mix together all ingredients and make your pancakes. Easy peasy!
(This is the basic recipe that you can customize in any way you like. Instead of broccoli, carrots and cauliflower, you can add blueberries and bananas. Instead of 1 tablespoon of olive oil you could use 1 tablespoon applesauce or yogurt. Add egg yolks or grated cheese.)
