Now that Thanksgiving is over, we often have turkey left over, but maybe not enough to make another family meal, so we try to find recipes that takes a few cups of diced, cooked turkey that would serve the whole family by adding other ingredients. Of course, there are the old standbys like making turkey salad or small portions are good for appetizers.
However, this recipe for Southwestern Turkey Dumpling Soup solves two issues. One, how to use leftover turkey. Two, it allows a completely different taste from the traditional turkey and dressing when served at the holiday meal.
SOUTHWESTERN TURKEY DUMPLING SOUP
1 can (15 ounces) tomato sauce
1 can (14 1/2 ounces) diced tomatoes, undrained
1 3/4 cups water
1 envelope chili seasoning
1 Tablespoon of sugar
3 cups diced, cooked turkey (An equal amount of cooked chicken can also be substituted for the turkey.)
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 1/2 ounces) whole kernel corn, drained
1 1/2 cups biscuit/baking mix
1/2 cup cornmeal
2 cups shredded cheddar cheese, divided
2/3 cup milk
Sour cream and your favorite salsa, optional
In a Dutch oven, combine the tomato sauce, diced tomatoes, water, chili seasoning, sugar and turkey; bring to a boil.
Reduce heat; cover and simmer for 10 minutes, stirring occasionally.
Add beans and corn.
Meanwhile, in a medium-size mixing bowl combine the biscuit mix, cornmeal and 1/2 of the cheese.
Stir in milk.
Drop by heaping Tablespoons onto the simmering soup.
Cover and cook for 12-15 minutes or until dumplings are firm.
Sprinkle with remaining cheese; cover and simmer 1 minute longer or until the cheese is melted.
Pour into individual bowls and sprinkle additional cheese on top and a dollop of sour cream or salsa as desired.
Serve immediately.
Makes 6-8 servings (or 2 1/2 quarts)
