White Chocolate Fresh Strawberry Cobbler

Spring has officially arrived, which means fresh fruits and vegetables are showing up at our local produce markets and chain stores. Of all the springtime produce, juicy strawberries are probably the most popular.

They’re delicious just as they are, but they may be served in many other ways. They’re great in salads and muffins or atop shortcakes. This White Chocolate Fresh Strawberry Cobbler is just one more way to use the luscious berry.

The cobbler can be served plain, but the addition of the white chocolate makes it an elegant dessert that will impress both family and friends.

WHITE CHOCOLATE FRESH STRAWBERRY COBBLER

2/3 to 1 cup sugar

1 tablespoon cornstarch

1 cup water

1 teaspoon vanilla

3 cups fresh strawberries, stemmed, washed and sliced (include juices from slicing them)

3 tablespoons butter, chunked

1/2 teaspoon ground cinnamon

1 cup all-purpose flour

1 tablespoon sugar

1 1/2 teaspoons baking powder

1/2 teaspoon salt

3 tablespoons shortening

1/2 cup milk

1 cup white chocolate morsels

Heat oven to 400 degrees.

Mix sugar and cornstarch in a small saucepan and gradually add water. Bring to boil and boil for 1 minute, stirring constantly. Then, add the vanilla.

Add strawberries and whatever juice there is. Pour the mixture into a 1 1/2-quart baking dish; dot with butter and sprinkle with cinnamon

Mix flour, sugar, baking powder and salt in a medium-size bowl. Cut in shortening until mixture looks like “meal.” Stir in milk.

Drop by spoonsful onto hot fruit. Bake for 25-30 minutes or until cobbler is golden brown.

While cobbler is baking, melt 1 cup of white chocolate morsels in a microwave for about 1 minute. Stir until smooth.

When cobbler is done baking, take out of oven and, using a table knife, drizzle melted chocolate in slanted stripes across the top of the cobbler. Serve with a dollop of whipped cream or whipped topping. Makes 8 servings

Note: You can substitute other fresh fruit, like cherries, peaches, apricots or blackberries.
