It’s Super Bowl party time, when families and friends get together to watch football, or maybe just the halftime show or the commercials. For those who are not so enthusiastic about the game, it’s still fun to celebrate the day with loved ones. The great snacks are another great reason to attend Super Bowl parties, even if you’re not a football fan.
Whether you’re throwing a party or making a dish to take to one, you don’t want to spend a lot of time preparing it. You want to enjoy the party, too, after all.
This recipe for Two-Cheese Quesadillas is an easy, filling dish you can make in no time, and it may even prove to be the party favorite. This quesadillas taste great and go perfectly with the ever-popular pot of chili served at most Super Bowl parties!
TWO-CHEESE QUESADILLAS
4 (8-inches) flour tortillas, warmed
1 cup (4 ounces) shredded cheddar cheese
1 cup (4 ounces) shredded part-skim mozzarella cheese
2 small tomatoes, finely chopped
1/2 cup finely chopped green pepper
1/4 cup chopped onion (optional, personal preference)
Salsa
Sour cream
Place tortillas on a griddle. Sprinkle each tortilla with the cheeses, tomatoes, green pepper and onion.
Fold over and cook over low heat for 1-2 minutes on each side or until cheese is melted. Cut each tortilla in half. Serve with salsa and sour cream.
Makes 2-4 servings. Recipe can easily be doubled.
