It’s often difficult to get young kids and teens to eat breakfast. While youngsters may be too finicky to eat the breakfast you make, teenagers often claim they don’t have time to eat, usually because they took too much time getting ready for school, or because they need those last few minutes before catching the bus to cram for exams or finish their homework
The little ones usually aren’t fond of the foods that make a good breakfast to start their day, so they make up excuses, saying they’re not hungry or they have a tummy ache – excuses parents are all too familiar with from their own childhood.
But, if doughnuts or waffles drenched in maple syrup are placed on the table, then their appetites suddenly return or their stomachaches are miraculously cured. The following recipe for a Strawberry Puff Pancake is another tasty dish that just might entice kids of all ages to eat breakfast.
STRAWBERRY PUFF PANCAKE
2 tablespoons butter
3 eggs
3/4 cup fat-free milk
1 teaspoon vanilla
3/4 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon ground cinnamon
1/4 cup sugar
1 tablespoon cornstarch
1/2 cup water
1 cup sliced fresh strawberries
Confectioners’ sugar
Place butter in a 9-inch pie plate; place in a 400-degree oven for 4-5 minutes or until melted.
Meanwhile, in a small bowl, whisk together the eggs, milk and vanilla. In another small bowl, combine the flour, salt and cinnamon; whisk the dry mixture into the egg mixture until blended.
Pour into prepared pie plate. Bake for 15-20 minutes, or until sides are crisp and golden brown.
In a small saucepan, combine the sugar and cornstarch. Stir in water until smooth. Cook and stir over medium heat until thickened. Coarsely mash strawberries or leave them in slices. When sauce has cooled somewhat, mix strawberries with sauce and pour mixture in the center of the pancake, leaving an edge around the outside.
Dust with the confectioners’ sugar. Makes 4 servings.
