peanut butter fruit dip

With hot weather still in the forecast for another month or more, we’ll be looking for refreshing foods that are light and healthy. Kids always are looking for snacks whether they’re home for summer vacation or when school is in session. As soon as they get off the school bus, they want something to tide them over until supper.

This fruit dip recipe combined with a variety of sliced, fresh fruit is a tasty, healthy choice. It’s also a great appetizer for parties or late summer barbecues. It’s especially good this time of year when seasonal fruit is at its peak and plentiful, but it’s a crowd-pleaser any time of the year.

PEANUT BUTTER FRUIT DIP

2 cups skim or 2-percent milk

1/2 cup sour cream (light or regular)

1 (3.4 ounce) package vanilla instant pudding mix

1 cup smooth peanut butter

1/3 cup sugar

Sliced fruit such as apples, bananas, pears, peaches and whole strawberries

Combine pudding mix with sour cream and one cup milk with a spoon. Add peanut butter and sugar and gradually add remaining one cup milk a little at a time. Gently stir together. Finish with a rotary mixer and beat until smooth. This last step should take only a few minutes. Refrigerate about 30 minutes and serve with sliced fruit. Keep any leftover dip in an airtight container in the refrigerator. Makes about 3 cups.
