Springtime means outdoor time! When cabin fever has given way for another season, it’s time to get outside and let the work begin. After months of indoor activity or lack of it, it’s actually nice to be able to get lawns in shape, prune some shrubs and plant trees again. It’s probably too early to plant annuals or anything that can’t withstand one last Arctic blast, so I’ll give it another week or so for that work to begin.

With spring’s arrival and all the outdoor activities calling, you want to stay outside as long as possible, but you also have to make meals and snacks for the family. That’s when this no-bake cookie recipe comes in handy.

You can have these tasty treats ready for the kids to eat in no time since you make them right on top of the stove. There’s no waiting for one batch to bake before sliding another batch into the oven. All you do is drop spoons full of the cooked cookie mixture onto waxed paper, let the cookies set up and you’re good to go! The cookies can be made in about 20 minutes.

NO-BAKE CHOCOLATE COOKIES

1 1/2 cups quick-cooking oats

1/2 cup flaked coconut

1/4 cup chopped walnuts

3/4 cup sugar

1/4 cup milk

1/4 cup butter or margarine

3 tablespoons unsweetened cocoa

In medium bowl combine oats, coconut and walnuts; set aside. In 2-quart saucepan combine sugar, milk, butter and cocoa. Cook over medium heat, stirring occasionally, until mixture comes to a full boil (3-4 minutes).

Remove from heat. Stir in oat mixture. Quickly drop rounded teaspoons full of the cookie mixture onto waxed paper.

Cool completely. Store in refrigerator. Yields 2 dozen cookies.
