Independence Day celebrations are here, which means the sound of fireworks will soon be heard all across the county. It also means families and friends will be gathering for barbecues or other favorite holiday meals, and maybe setting off a few fireworks of their own.
If you’re tired of the same grilled hamburgers, hot dogs, pork steaks or chicken, you might like to try a Grilled Ham steak with Mustard Sauce for a change of pace. It’s so easy to make and takes only minutes to fix. For a 1-pound ham slice (about 1/2-inch thick), you just need 1 tablespoon of Dijon mustard, mixed with 1 tablespoon of honey and 1 tablespoon of apricot preserves and set it aside.
Then you just fire up your grill and place your ham steak over medium-high heat, cover and grill for about 4 minutes. Open the grill, turn the ham steak over and brush half of the mustard mixture over the top of it. Let it cook about 4 minutes longer and turn it over. Brush the remaining half of mustard mixture over this side, close the cover again and let it cook about 2 minutes longer or until thoroughly heated. Remove to a platter and serve warm. Each ham steak will make 2 to 3 servings.

MILE-HIGH STRAWBERRY PIE
1 (10-ounce) package frozen strawberries, thawed
2 egg whites, unbeaten
2/3 cup sugar
1 tablespoon lemon juice
1/2 teaspoon salt
1 ((8-ounce) carton frozen whipped topping, thawed
1 9- or 10-inch baked pie shell or graham cracker crust
Put all ingredients the except whipped topping and pie crust in a large bowl and beat with an electric mixer at medium speed for 10-15 minutes, or until mixture holds its shape.
Fold whipped topping into strawberry mixture. Pile lightly into pie shell. Store in freezer until just before serving time.
Garnish with berries, if desired. Makes 8 servings.
