One nice thing about being a grandma is having teenage grandchildren stop by to eat homemade desserts! Nothing makes grandmas happier than being asked for “second helpings,” especially when there’s only you and Grandpa home to eat whatever you’ve made. Unless it can be put in the freezer and eaten later, you get pretty tired of it before it’s all gone.

I’m not a big fan of blueberries, but I had several frozen packages of them I wanted to use when someone else showed up to help Grandpa eat them. So, when our grandson, Sam, and his mom recently came by for a visit, it was the perfect time to make this Blueberry Granola Crumble Pie. Granola is something I don’t often have on hand, but it’s so easy to make yourself. The recipe I have makes way more than I needed for the pie, so I cut the recipe in half and still have plenty to use as cereal for the next few days.

If you want to make the full granola recipe, it calls for 3 cups cooking oats, 3 tablespoons light brown sugar, 1/2 teaspoon ground cinnamon, 1/4 teaspoon Kosher salt, 1/3 cup honey, 1/4 cup oil, 1 teaspoon vanilla, 1/2 cup diced dried fruit and 1/2 cup coarsely chopped raw or toasted nuts or sunflower seeds. Heat your oven to 300 degrees. Place oats, brown sugar, cinnamon and salt in a large bowl and stir to combine and set aside. Next, place the honey, oil, and vanilla in a small bowl and stir to combine. Pour the honey mixture over the oat mixture and then spoon all into a thin, even layer on a rimmed baking sheet. Stir and bake till granola is light golden brown (about 5 to 15 minutes). Remove from oven and cool to room temperature, stirring occasionally, for about 20 minutes. It will harden as it cools. Add the dried fruit and nuts (or seeds) to the oats on the baking sheet and toss to combine. (It can be stored up to two weeks in an airtight container.)

Then, you have the granola you need to make this good news is you don’t have to be a “grandma” to bake this pie, nor a “grandchild” to enjoy it!

BLUEBERRY GRANOLA CRUMBLE PIE

1 (16-ounce) package frozen, unsweetened blueberries

1/4 cup sugar

2 tablespoons lemon juice

1 1/2 tablespoons cornstarch

2 teaspoons vanilla

1 frozen pie crust (OR your own homemade single crust)

1 cup granola

Preheat oven to 425 degrees and place baking sheet in oven while preheating.

Toss blueberries, sugar, lemon juice, cornstarch and vanilla to coat. Spoon blueberry mixture into pie crust; place on heated baking sheet.

Bake 20 minutes; sprinkle granola evenly over pie. Bake an additional 20 minutes or until pie is bubbly.

Makes 8 servings.

Note: It tastes even yummier with a scoop of vanilla ice cream or whipped topping!
