1 vacio or flank steak, 4 or 5 pounds

Heat grill to very hot. Start with an initial sear on all sides on the grill, then either move the coals to one side or shut off all but one heating element on the grill. Cover the grill, and let the steak cook very slowly, until internal temperature reaches 128-132 degrees for medium rare.

 Let the steak rest 10 minutes, then slice it thinly across the grain.

For Salsa Criolla

1 onion, finely chopped

2 red bell peppers, finely chopped

1 tomato, seeded and finely chopped

1 garlic clove, minced

1 tablespoon parsley, finely chopped

1/2 cup olive oil

1/4 cup white wine vinegar

Salt and pepper to taste

Combine onion, red bell peppers, tomato, garlic clove, parsley, olive oil, and vinegar in a medium bowl. Season with salt and pepper to taste. You can use the salsa immediately, but it’s better if the flavors meld.        -- thespruce.com
