Deviled Beef Stew and Quick Peach Cobbler

For most families, beef stew is a common dish to include on menus year-round, but this Deviled Beef Stew recipe adds a new twist to an old favorite. It includes a cup and a half of Coca-Cola in the mix, giving it a little zip compared to the regular beef stew recipes.

You’re going to want to finish off dinner with a sweet treat, and now that peaches are in season you might want to try this Quick Peach Cobbler. It’s both easy to make and delicious.

DEVILED BEEF STEW

1 1/2 pounds beef stew meat, cut in 1-inch cubes

1/3 cup all-purpose flour

2 tablespoons cooking oil

2 cups water

1 tablespoon dry mustard

1 1/2 teaspoons salt

1 garlic clove, minced

1 teaspoon chili powder

1 teaspoon Worcestershire sauce

1/4 teaspoon black pepper

1 teaspoon chili powder

1 1/2 cups Coca-Cola (or other brand of cola)

4 medium potatoes, peeled and quartered

2 small onions, quartered

4 carrots, cut into small chunks

2 stalks of celery, cut into 1-inch pieces

1/4 cup cold water

In a plastic bag, toss the beef cubes with flour to coat, reserving the remaining flour. Then, in a saucepan or Dutch oven, brown the beef, 1/3 at a time, in hot oil. Return all the meat to the pan and remove from the heat.

Add the 2 cups of water, mustard, salt, garlic, chili powder, Worcestershire sauce and pepper and simmer, covered, for 1 to 1 1/2 hours or until meat is almost tender. Add the Coca-Cola, potatoes, onions, carrots and celery and simmer, covered, about 30 minutes or until vegetables are tender.

For gravy, remove the meat and vegetables; skim off any fat from the liquid, if necessary. Blend 1/4 cup cold water into the reserved flour until smooth. Slowly stir into the hot liquid. Cook and stir until thickened and bubbly. Season to taste with salt and pepper. Return meat and vegetables to gravy mixture and heat.

QUICK PEACH COBBLER

Filling:

1 cup sugar

2 tablespoons cornstarch

1/4 teaspoon ground nutmeg

4 cups peeled and sliced peaches

Cobbler:

1 cup all-purpose flour

1/4 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup cold butter

1 egg, slightly beaten

3 tablespoons milk

Whipped cream or Whipped topping (optional)

Heat the oven to 400 degrees. In a large bowl, stir together 1 cup sugar, cornstarch and nutmeg. Add peaches; toss gently to coat. Place in a 9-inch square baking pan.

In a medium bowl stir together, flour, 3 tablespoons sugar, baking powder and salt; cut in butter until crumbly. Stir in egg and milk just until moistened. Drop 9 equal portions of dough onto peaches. Sprinkle with remaining sugar.

Bake for 30 to 35 minutes or until golden brown and bubbly around edges. Serve with whipped cream, if desired. Makes 9 servings.

Note: If cobbler dough seems too stiff, add 1 tablespoon milk.
