Caribbean Stew, French Onion Dip Potatoes

Stews and soups go over well in January when cold winds are blowing and you need something to warm you up inside. This Caribbean Stew is just the recipe to do that. While you think of those warm, sunny islands, this warm stew will warm you as well as satisfy your hunger.

This French Onion Dip Potatoes is another great dish to make this winter. It’s easy to make and goes well with most cold-weather main dishes.

CARIBBEAN STEW

1 tablespoon olive or vegetable oil

1 pound lean boneless pork, cut into 1 1/2-inch chunks

2 medium onions, cut into wedges

1 (14-ounce) can chicken broth

1 (14.5-ounce) can diced tomatoes, undrained

1 (8-ounce) can tomato sauce

1/4 teaspoon cayenne pepper (optional)

2 medium sweet potatoes, peeled and cut into small chunks

2 small green, yellow and/or red sweet peppers, seeded and cut into bite-size strips

1 cup canned black beans, rinsed and drained

3 tablespoons lime juice

Coat an unheated 4-quart Dutch oven with nonstick cooking spray. Place oil in Dutch oven and heat over medium heat. Add pork to hot Dutch oven; cook and stir until brown.

Add onions, chicken broth, undrained tomatoes, tomato sauce and cayenne pepper (if used). Bring to boiling; reduce heat. Simmer, covered, for 30 minutes.

Add sweet potatoes, sweet pepper and black beans. Return to boiling, reduce heat. Simmer, covered, about 20 minutes more or until vegetables are tender. Stir in lime juice. Makes 6 servings.

FRENCH ONION DIP POTATOES

8 medium potatoes, peeled, cubed, boiled

1 (8-ounce) package cream cheese, softened

1 (8-ounce) container French onion dip

1/2 teaspoon salt

1/2 stick butter

Mix drained potatoes, cream cheese, onion dip and salt. Spoon into a greased 3-quart casserole dish; dot with butter.

Bake, covered, at 350 degrees for 35-40 minute, a little longer if refrigerated overnight. Makes 6 to 8 servings.

Note: If you make this recipe a day ahead, it’s even better.
