With Christmas behind us for 2024, we begin to look ahead to the upcoming year and what may be in store for us. It’s also a time fir celebration, both on New Year’s Eve and New Year’s Day. If you’re throwing or attending a New Year’s party, you may want to make an appetizer to share with friends and family.
If you’re looking for something a little different for this year, try this Easy Mexican Dish, which you spoon onto tortilla chips. This Swiss Cheese and Bacon Spread is another good choice and is great served with your favorite kind of cracker.
Both dishes are tasty and will be a hit when you’re ringing in the New Year!
EASY MEXICAN DISH
5 or 6 small flour tortillas
16-ounce can of chili (with or without beans)
1 small onion, finely chopped
1 cup Monterey Jack cheese, finely shredded
1 package of tortilla chips
Break up flour tortillas in the bottom of a 9-by-7-inch microwave-safe baking dish. Pour chili over tortillas. Top with chopped onion.
Finally, layer Monterey Jack cheese on top. Microwave until onion is tender, about 4 minutes. Spoon onto tortilla chips. Serves 6 to 8.
SWISS CHEESE SPREAD
2 cups (8 ounces) finely shredded Swiss cheese
3 heaping tablespoons sour cream
2 tablespoons minced onion
4 slices crisply cooked bacon, crumbled
1/2 teaspoon salt
1/2 teaspoon garlic powder
Combine all ingredients. Beat until it’s smooth and can be spread easily.
Chill at least an hour before serving. Makes about 2 cups.
