Country Apple Dessert and Festive Winter Crunch Bark

While we all like our sweet treats during the holidays, a sweet tooth isn’t determined by the time of year. Here are two recipes that will satisfy your craving for something sweet during the winter or anytime of year.

This Country Apple Dessert is a tasty after-dinner treat. It’s simple to make, too.

Another easy-to-make, sweet treat is this Festive Winter Crunch Bark. It’s a great snack to serve family or friends who might stop by.

COUNTRY APPLE DESSERT

Base:

1 package of yellow cake mix

1/3 cup butter or margarine, softened

1 egg

1 (21-ounce) can apple pie filling

Topping:

1/2 cup firmly packed brown sugar

1/2 cup chopped walnuts

1/2 teaspoon cinnamon

1 cup dairy sour cream

1 egg

1 teaspoon vanilla

Preheat oven to 350 degrees. In a large bowl, combine cake mix, butter or margarine and 1 egg and mix on low speed until crumbly. Press into an ungreased 13-by-9-inch baking pan. Spread with apple pie filling.

In a separate bowl, combine brown sugar, walnuts and cinnamon and sprinkle over apple filling. In a small bowl, blend sour cream, 1 egg and vanilla and spoon evenly over sugar mixture.

Bake at 350 degrees for 40 to 50 minutes or until the top is golden brown. Serve warm or cool. Makes 12 servings.

FESTIVE WINTER CRUNCH BARK

1 (20-ounce) package vanilla or chocolate-flavored almond bark, coarsely chopped

3/4 cup macadamia nuts, coarsely chopped

1/2 cup sweetened, flaked coconut

2 cups crisp rice cereal

Melt almond bark in microwave oven or over a double boiler. Meanwhile, coarsely chop nuts with a food chopper.

Mix nuts and coconut in a shallow pan and toast in a 350-degree oven for about 5 minutes, or only until golden brown, stirring once while toasting. Stir half of the nut mixture and all of the cereal into melted bark.

Pour bark mixture into a pan or glass baking dish, spreading evenly. Immediately sprinkle with remaining nut mixture, pressing into bark mixture.

Refrigerate 30 to 40 minutes or until set; then cut into 2-inch pieces. Makes about 32 servings.

Note: You may use cashew nuts, walnuts or pecans instead of the macadamia nuts.
