1 12-14 pound turkey

1/2 cup thyme

1/2 cup sage

1/2 cup black pepper

1/2 cup parsley flakes

1/4 cup rosemary

1 orange

1 small onion

Celery

Carrots

1/2 cup unsalted butter, pluse more for basting

Preheat oven to 325 degrees.

In a small bowl, mix together thyme, sage, black pepper, parsley flakes and  rosemary to make a seasoning mix.

After removing giblet bag from turkey, wipe out cavity with cloth. Rub seasoning mix into cavity.

Quarter the orange and onion. Chop celery stalks and carrots. Stuff into cavity. Melt 1/2 cup of unsalted butter and brush over skin of entire turkey. Place tent of aluminium foil over the breast portion of the turkey.

Roast for 3 1/2 hours. Remove tent, apply more butter and roast for an additional 30 minutes at 350 degrees.
