Cooking spray
3 slices whole-grain bread (lowest sodium available), cubed
1 package frozen chopped spinach (10-ounce package), thawed and squeezed dry
2 medium Italian plum (Roma) tomatoes, diced
1/3 cup diced Canadian bacon
4 medium green onions, thinly sliced
1/4 shredded low-fat Swiss cheese
1/4 cup coarsely chopped fresh basil (or 4 teaspoons dried)
1 1/2 cup fat-free milk
1 cup egg substitute
1/4 teaspoon black pepper
Preheat oven to 350 degrees (see note if preparing the night before).
Lightly spray an 8-inch-square baking pan with cooking spray.
In the baking pan, stir together the bread cubes, spinach, tomatoes, Canadian bacon, green onions, Swiss cheese and basil.
In a medium bowl, whisk together milk, egg substitute and pepper. Pour over bread mixture.
Bake for 55 to 60 minutes or until the center of the strata is set (the casserole shouldn’t jiggle when pan is gently shaken). Let cool 10 minutes before cutting.
Makes 4 servings.
Note: If you prepare the night before, cover with plastic wrap and refrigerate overnight. Place casserole in cold oven. Set the oven to 350 degrees and bake for 65 to 70 minutes. Let cool for 10 minutes before cutting.
