During the week of Aug. 10, the Jefferson County Health Department inspected 45 food establishments. Scores ranged from 66 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of Aug. 10 are listed below. They are all routine inspections unless otherwise noted.
■ Baisch Nursing Center, 3260 Baisch Drive, De Soto, scored 98 on Aug. 14. Violations: water-stained ceiling tiles; and dusty ceiling register.
■ BP on the Run, 102A Delores Drive, Fenton, scored 94 on Aug. 12. Violations: cardboard debris in hand sink; scoop stored handle down in flour; cracked or damaged light shields/leak underneath condenser unit in walk-in cooler; and soiled inner surface of ice machine.
■ Burger King, 3600 West Outer Road, Arnold, scored 99 on Aug. 12. Violation: ice buildup near door of walk-in freezer.
■ Burger King, 1652 Hwy. Z, Pevely, scored 98 on Aug. 12. Violations: no label on bucket with powder; and debris on floor underneath fryers.
■ Circle K, 2285 S. Old Hwy. 141, Fenton, scored 98 on Aug. 13. Violations: sweet tea containers stored without lids; and torn gasket on beer walk-in cooler/ice buildup on walk-in freezer condenser.
■ Circle K, 2001 Richardson Road, Arnold, scored 100 on Aug. 11.
■ Dairy Queen, 90 Scenic Plaza Drive, Herculaneum, scored 98 on Aug. 12. Violations: black, greasy residue on top of water heater; and dust buildup on light shields.
■ Dollar General, 102 Twin City Mall, Crystal City, and Dollar General, 901 Peachtree Plaza Drive, Hillsboro, had field visits.
■ Domino’s Pizza, 1271 Imperial Main St., Imperial, scored 89 on Aug. 12. Violations: no proof of employee food safety certificates; no staff with manager food safety certificate; unlabeled chemical spray bottle; dusty filter on cooler and ice buildup inside; and damaged wall behind sink.
■ Emmanual Baptist Church Food Pantry, 13270 Hwy. CC, De Soto, was inspected on Aug. 12. No score given due to low priority.
■ Express Mart Seckman, 2865 Seckman Road, Imperial, scored 66 on Aug. 12. Violations: No proof of employee food safety certificates; no staff with manager food safety certificate; incorrect sanitizing solution in sink; no sanitizer in dish sink dispenser; foods above safe temperature; unlabeled spray bottle on dish sink; dead insects in ceiling lights; many food boxes and bags of ice stored on floor in walk-in freezer; boxes of single-serve items stored on floor in shed; walk-in freezer door doesn’t fully close; ice buildup behind evaporator fan box; debris buildup in floor sink; and mop stored in mop water when not in use.
■ Firm Foundations Christian Academy Daycare, 2012 Missouri State Road, Arnold, scored 100 on Aug. 12.

■ Fountain City Grille, 4660 Yeager Road, Hillsboro, scored 88 on Aug. 12. Violations: incorrect sanitizer solution in sink; and incorrect sanitizer solution in bucket.
■ Ginny’s Kitchen and Custards, 7022 Hwy. 61-67, Barnhart, scored 93 on Aug. 15. Violations: soiled can opener; presence of pests near the syrup storage rack; and discarded gloves under lid of prep top table.
■ Grand Slam Sports Bar and Grill, 519 Mae Court, Fenton, scored 97 on Aug. 12. Violations: wiping cloth in hand sink; clean lids stored in containers with debris; and soiled fan/shelves holding plates.
■ Holiday Inn Express and Suites, 1802 Gamel Cemetery, Festus, scored 100 on Aug. 11.
■ Jesse’s Pizza and Wings, 5633 Old Hwy. 21, House Springs, scored 76 on Aug. 12. Violations: employee failed to wash hands before putting on gloves; case of raw bacon stored on top shelf above cooked chicken wings; food holding at incorrect temperature; cases of broccoli and sauces stored on floor of walk-in freezer; frost buildup in chest freezer/walk-in cooler missing insulation and was sweating; soiled bottom of cooler, wire shelves and dish table; and dust buildup on ceiling vents.
■ Karsch’s Village Market Bakery/Deli, 10724 Business 21, Hillsboro, scored 100 on Aug. 11.
■ Karsch’s Village Market Meat/Grocery/Produce, 10724 Business 21, Hillsboro, was inspected on Aug. 11. No score given due to low priority.
