During the week of Aug. 31, the Jefferson County Health Department inspected 19 food establishments. Scores ranged from 62 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.

Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.

According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:

■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.

■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.

■ One point for core violations related to general sanitation and good retail practices.

■ Two points for repeat violations of any type.

Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.

He said a couple of priority violations are more concerning than several core violations.

In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.

Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of Aug. 31 are listed below. They are all routine inspections unless otherwise noted.

■ 7 Brew Coffee, 606 S. Truman Blvd., Festus, was inspected on Sept. 3. No score given due to low priority.

■ American Legion Post Kitchen, 849 American Legion Drive, Festus, scored 88 on Sept. 3. Violations: food discarded because left side of refrigerator was holding at 52 degrees; and dish sink and prep sink needs air gap in plumbing system.

■ Big River Pizza Co., 6710 Mall Drive, Cedar Hill, scored 93 on Sept. 3. Violations: exposed lighting in dry storage/damaged ceiling tiles; dishes stacked wet; soiled hood filters, floor fan and dish machine exterior; wet mops stored on floor; and dusty ceiling.

■ Casa Charro, 100 S. Truman Blvd., Crystal City, scored 72 on Sept. 2. Violations: no current employee with manager food safety certificate; no staff with food safety certificates; whipped topping and cheese stored above safe temperature; back screen door in disrepair/gaps in front door; unsealed bag of sugar; single-serve cup used as scoop for sugar/scoops with no handles/ice scoop handle resting on ice/knife stored between wall and prep table; unused equipment stored outside by back door; and water-damaged ceiling tile/chipped painted kitchen floor/wall and coving in disrepair/door hinge in disrepair.

■ Cedar Hill MotoMart, 8489 Local Hillsboro Road, Cedar Hill, scored 96 on Sept. 3. Violations: blocked hand sink; and ice buildup on evaporator unit in ice cream walk-in cooler.

■ Denny’s, 1203 Drury Lane, Arnold, scored 62 on Sept. 3. Facility voluntarily closed during the inspection, which lasted from 11:30 a.m. to 4:30 p.m., to complete cleaning before reopening for dinner service. All foods with temperature concerns were discarded by manager. ■ Express Mart, 900 Tree Plaza Drive, Hillsboro, scored 93 on Sept. 5. Violations: fountain drink nozzles need to be cleaned; ice buildup in walk-in freezer; dust buildup in hood filters/soiled fan; excessive black mold growth around light fixtures in beer cooler and walk-in coolers; and rubber mallet on syrup rack.

■ Grind Coffee Co., 4561 Gravois Road, House Springs, was reinspected on Sept. 5. No score given.

■ Happy Wok, 17 Walters Place, House Springs, was reinspected on Sept. 5. No score given.
