During the week of April 27, the Jefferson County Health Department inspected 36 food establishments. Scores ranged from 65 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities that are considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of April 27 are listed below. They are all routine inspections unless otherwise noted.
■ 8 Ball Pool, 4545 Gravois Village Center, Fenton, scored 90 on May 2. Violations: no staff member with manager food safety training on duty; hand sinks blocked with dishes; dust buildup on hood above grill; and dirty floor under fryer.
■ Ace Shisha Lounge, 469 Jeffco Blvd., Arnold, was inspected on April 30. No score given due to low priority.
■ Big River Pizza Co., 6710 Mall Drive, Cedar Hill, scored 95 on May 2. Violations: single-use utensil used as scoop; can opener blade damaged; dishwasher and pizza oven outer surfaces soiled; water fixture inoperable; and water damage on ceiling in walk-in cooler;
■ Cedar Hill Lutheran Church, 8600 Silver Lane, Cedar Hill, scored 96 on April 30. Violations: soiled microwave plate; and burned-out light bulb.
■ China King, 229 Arnold Crossroads Center, Arnold, scored 84 on April 29. Violations: pair of gloves in hand sink; soiled can opener; and wet rags stored outside of sanitizer solution.
■ Cool Beans Cafe, 316 Locust St., Hillsboro, scored 100 on May 2.
■ Denny’s, 1203 Drury Lane, Arnold, scored 88 on May 1. Violations: employee cup in kitchen area without lid; soiled microwaves; box of tomatoes stored on cooler floor; washed pans stacked wet; ice buildup in walk-in freezer; buildup of grease and food debris in kitchen; burnt-out light bulbs; and soiled air vent above ice machine.
■ Dittmer BP, 10054 Hwy. Y, Dittmer, scored 93 on April 29. Violations: ice buildup in walk-in freezer; soiled fan guards in walk-in; and soiled ceiling tiles around vents.
■ Domino’s Pizza, 32 Gannon Square, Pevely, was reinspected on April 29. No score given.
■ Dylan’s Sports Bar & Grill, 675 Jeffco Blvd., Arnold, scored 93 on May 2. Violations: soda gun and holder had pink, slimy fungal-type matter on inside; soiled ice machine deflector plate; dishwasher temperature under proper temperature; and urine odor in restroom.
■ Express Mart, 6911 Metropolitan Blvd., scored 92 on April 29. Violations: staff couldn’t find manager food safety training certificates; no soap at hand sink; gap under back door; and wiping cloth not stored in sanitizer solution.
■ Fazoli’s, 807 Lee Ave., Festus, scored 97 on April 29. Violations: disconnected soda nozzle stored on floor; scoop handle down in salt; and leak in dish sink.
■ Fazoli’s, 123 Arnold Crossroad Center, Arnold, field visit on April 28 regarding repairs from the March tornado.
■ Fountain City Grille, 4660 Yeager Road, Hillsboro, scored 90 on April 30. Violations: sliced tomatoes stored improperly; wash water temperature below minimum; and soiled cutting board.
■ Happy Wok, 3916 Vogel Road, Arnold, scored 67 on April 30. Violations: hand sink blocked; no soap at hand sink; no paper towels at hand sink; raw fish and meat stored above cooked meat and ready-to-eat produce in fridge; soiled can opener blade; raw chicken sitting out without time or temperature control; wiping clothes not stored in sanitizer solution; walk-in cooler floor in disrepair/walk-in cooler gasket broken; and flour spill around mop sink.
■ Here We Grow Child Care & Learning Center, 38 Fox Valley, Arnold, was visited on April 30 regarding tornado damage/facility currently closed.
■ KFC, 1436 Jeffco Blvd., Arnold, scored 83 on April 29. Violations: chicken breading flour not sifted every four hours; dead roaches throughout facility; dead insects in light guards; freezer grill kick plate missing; area behind grill kick plate soiled; faucets leaking; and soda bags leaking onto floor/floors and walls have grease accumulation.
■ Subway, 657 Jeffco Blvd., Arnold, scored 93 on May 1. Violations: no staff on duty with manager food safety training; soda dispenser nozzles dirty; and knife scraping brush stored in standing water.
■ Mr. Fuel, 8915 Weir Road, Pevely, scored 100 on April 30.
■ Pomodoro’s Pasta & Subs, 3618 Jeffco Blvd., Arnold, scored 100 on April 28.
■ Que Pasa, 1165 Gravois Road, Suite 100, Fenton, scored 66 on May 1. Violations: no staff member with manager food safety training; empty paper towel dispensers; can opener in hand sink; soiled can opener blade; numerous prepared items in cooler without date marked; cleaning spray stored with margarita mix/dish detergent stored next to steak sauce; gnats in back part of facility near mop sink; prepared food items stored underneath evaporation unit of cooler with no covering; boxes of drinking glasses stored on floor; multiple surfaces in dry storage area covered in syrup; and light fixture in disrepair.
■ S&J Sno-Ball Shop, 754 Tenbrook Plaza, Arnold, was inspected. No score given due to low priority.

■ St. Louis Pizza and Wings, 4519 Gravois Village Plaza, High Ridge, scored 98 on May 2. Violations: single use cup used as scoop; and exhaust hood soiled.
■ St. Martin’s United Church of Christ, 7890 Dittmer Ridge Road, Dittmer, scored 94 on April 29. Violations: empty paper towel dispenser; and can opener blade needs cleaning or replacing.
■ Taco Tequila Bar, 10814F Business 21, Hillsboro, field visit regarding expansion.
■ Texas Roadhouse, 806 Arnold Commons Drive, Arnold, scored 99 on May 1. Violation: dust accumulation on vent intake.
■ TJ’s Bar and Grill, 8641 Commercial Blvd., Pevely, scored 93 on April 30. Violations: soiled soda gun nozzles and holders; unlabeled spray bottle; and loose cove base.
■ VFW Post 2593, 2301 Church Road, Arnold, scored 97 on April 30. Violation: debris on ice machine baffle.
■ Waffle House, 3960 Vogel Road, scored 94 on April 28. Violations: standing water in bottom of reach-in cooler; and food debris throughout/standing water and debris under ice machine/food debris in walk-in cooler.
■ Weber’s Front Row, 3930 Vogel Road, Arnold, scored 71 on April 29. Violations: raw eggs stored over ready-to-eat foods; improper sanitizer level in dish machine; two coolers not cooling properly; walk-in cooler gasket torn; outside of fryers soiled with grease accumulation/soiled dish racks; grease accumulation on wall behind fryers/soda spill on soda boxes; concrete flooring needs sealant; and dust accumulation on vents.
