During the week of May 10, the Jefferson County Health Department inspected 40 food establishments. Scores ranged from 80-100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.

Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.

According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:

■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.

■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.

■ One point for core violations related to general sanitation and good retail practices.

■ Two points for repeat violations of any type.

Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.

He said a couple of priority violations are more concerning than several core violations.

In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.

Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of May 10 are listed below. They are all routine inspections unless otherwise noted.

■ 8 Ball Pool, 4545 Gravois Village Center, High Ridge, scored 94 on May 14. Violations: no paper towels at dish sink; and damaged tiling at walk-in cooler.

■ Behold Coffee, 105 Market St., Kimmswick, was inspected on May 14. No score given due to low priority.

■ Big River VFW Post 5331, 1 Lynn Lane, Cedar Hill, scored 100 on May 15.

■ Buzz’n Coffee Co. mobile was inspected on May 14. No score given due to low priority.

■ Casey’s, 10534 Hwy. 21, Hillsboro, scored 85 on May 13. Violations: couldn’t locate food safety certifications/training records for employees; no paper towels at dish sink; flies throughout facility; ice buildup in walk-in freezers; and no chlorine testing strips.

■ Crystal City Marathon, 801 N. Truman Blvd., Crystal City, had a field visit to inspect new food preparation equipment.

■ Dunklin R-5 School District Blackcat Gym, 1 Blackcat Drive, Herculaneum, was inspected on May 13. No score due to low priority.

■ Dylan’s Sports Bar and Grill, 675 Jeffco Blvd., Arnold, scored 92 on May 13. Violations: ice machine baffle soiled; prep top lid covered in foam; food containers in disrepair; and mold-like substance in soda gun holder/dusty evaporator fan and condenser.

■ Eagle Mart, 7017 Hwy. 61-67, Barnhart, scored 85 on May 11. Violations: gaps in several doors; plastic spoons in opposite directions; stained/sticky cutting board; excessive ice buildup in walk-in freezer; soiled steam water basin/ice buildup in freezer/dusty fan guards/ice buildup in walk-in freezer; water-stained ceiling tiles/concrete breaking apart in front of walk-in freezer door; and soiled restroom door.

Violations: residue buildup on sauce bottles and sugar/salt containers; wet wiping cloths on tables; soiled exterior of cook line equipment and containers; soiled restroom light switch/grease buildup on vent hood; soiled restroom floor; black residue on floor and floor drain under cook top/soiled floor under dish sink; and soiled vents.

Violations: limescale buildup on scoops and ladles; incorrect sanitizer solution; back door open; dish sink caulking in disrepair; limescale buildup in corners of dishwasher; coving tiles missing; dusty vent; burned-out light bulb in storage area; and broken light shield.

■ Hillsboro High School, 123 Leon Hall, Hillsboro, scored 96 on May 14. Violations: no lids on employee energy drinks; and ice buildup in walk-in freezer.

■ Hissho Sushi at Schnucks, 3900 Vogel Road, Arnold, scored 100.

■ Imo’s Pizza, 600 Jeffco Blvd., Arnold, was reinspected on May 14. No score given.

■ Imo’s Pizza, 1 Jefferson Square, De Soto, scored 86 on May 12. Violations: food debris in container holding scoops; torn gaskets; cracked and stained metal ladle; and dusty ceiling and walls/soiled vent hood/soda residue on wall behind soda boxes.
