During the week of Feb. 15, the Jefferson County Health Department inspected 31 food establishments. Scores ranged from 77 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of Feb. 15 are listed below. They are all routine inspections unless otherwise noted.
■ 21 Rock Grill and Bar, 16 Meramec Heights Shopping, Arnold, scored 83 on Feb. 20. Violations: tape inside ice machine; several coolers at incorrect temperature; gap under front door; torn gasket/fan missing in walk-in cooler evaporator; plywood sheet lining on wall of walk-in cooler; and dust on ceiling and walls of walk-in cooler.
■ Bandana’s Bar-B-Q, 1220 Big Bill Road, Arnold, scored 100 on Feb. 17.
■ Burger King, 3600 W. Outer Road, Arnold, scored 99 on Feb. 19. Violation: burger patties spilled onto walk-in freezer floor/debris buildup on storage racks.
■ China King, 412 N. Main St. De Soto, was inspected Feb. 19. No report attached or score given.
■ Culver’s, 123 Richardson Road, Arnold, scored 100 on Feb. 18.
■ Dairy Queen, 120 Jefferson Square, De Soto, scored 100 on Feb. 19.
■ Daddy O’s Cheesesteaks mobile scored 96 on Feb. 20. Violations: no food thermometer present; and water leak near water heater.
■ Dave’s Diner, 2823 High Ridge Blvd., High Ridge, scored 89 on Feb. 19. Violations: no dates marked on several items in walk-in cooler; ice buildup in walk-in freezer; soiled hood filters and vents; and wet mops touching floor.
■ Dave’s Diner, 1059 Gravois Road, Fenton, scored 94 on Feb. 18. Violations: scoop handle in sugar bin; walk-in cooler condenser covered in ice; and hole in wall.
■ De Soto Food Pantry, 705 E. Stone St., De Soto, was inspected on Feb. 19. No score given due to low priority.
■ Detour Grill and Bar, 2855 Seckman Road, Imperial, scored 77 on Feb. 19. Violations: raw hamburger stored over fully-cooked meat; soiled can opener blade; pulled pork at incorrect temperature; single-use cups being used as scoops; cracked plastic container; ice buildup in walk-in freezer; and heavy grease buildup under fryers.
■ Dollar General, 505 Jeffco Blvd., Arnold, was inspected on Feb. 18. No score given due to low priority.
■ El Lobo Rojo, 106 N. Main St., De Soto, scored 87 on Feb. 18. Violations: no soap at hand sink; no sanitizer in dishwasher; containers without covers; mineral buildup on inside of dishwasher/mineral and hard water buildup on dish racks; and missing diverter handle on faucet.
■ Fellowship First Baptist Church and Preschool, 2735 High Ridge Blvd., High Ridge, scored 99 on Feb. 20. Violation: gaps in between hood filters.
■ Festus-Crystal City Elks Lodge kitchen, 4 Elks Drive, Festus, scored 92 on Feb. 17. Violations: soiled microwave; no date on plate of sandwiches in walk-in cooler; ice buildup in refrigerator; and debris buildup under fryers.
■ Grind Coffee Co., 4561 Gravois Road, House Springs, was reinspected on Feb. 20. No score given.
■ Hillsboro Primary, 101 Leon Hall, Hillsboro, scored 100 on Feb. 17.
■ Holties Restaurant, 1374 Old State Hwy. M, Barnhart, scored 95 on Feb. 18. Violations: uncovered containers of food in freezer and walk-in cooler; standing water in reach-in cooler; and food debris throughout kitchen.
■ Hope Lutheran Church and Early Childhood Center, 2308 Gravois Road, High Ridge, was inspected on Feb. 20. No score given due to low priority.
