Valentine’s Day is over, but that doesn’t mean our carving for chocolate has ended. Here are two recipes sure to satisfy your chocolate craving, especially if you like cherries or peanut butter with your chocolate.
Both recipes are easy to make. They’re delicious, too. Enjoy!
CHOCOLATE CHERRY BARS
Cake:
1 box of chocolate cake mix
2 eggs
1/4 teaspoon almond extract
1 can of cherry pie filling
Topping:
1/2 cup milk
5 tablespoons butter
1 cup sugar
6 to 8 ounces of chocolate chips
To make the cake, mix the first 4 ingredients together and pour into a 9-by-12-inch greased baking dish. Bake at 350 degrees for 40-45 minutes.
In the meantime, make the topping by mixing together the milk, butter and sugar in a saucepan. Stir to boil, take off heat. Stir in chocolate chips. Stir until melted and then pour over cake.
Cut into smaller pieces than you would normally serve because this is a rich cake. Makes 10 servings.
PEANUT BUTTER FUDGE BARS
1 (18 1/4-ounce) box yellow cake mix
1 cup creamy peanut butter
1 egg
1/2 cup vegetable oil
1 (14-ounce) can sweetened condensed milk
1 cup (6 ounces) semisweet chocolate chips
2 tablespoons butter or margarine.
In a bowl, combine the cake mix, peanut butter, egg and oil. Press two-thirds of the mixture into a greased 13-by-9-2-inch baking pan. Bake at 350 degrees for 10 minutes. Cool on a wire rack for 5 minutes.
In a heavy saucepan, heat the sweetened condensed milk, chocolate chips and butter over low heat; stir until blended and then pour over crust.
Sprinkle with remaining crumb mixture and bake for 20-25 minutes or until golden brown. Cool on a wire rack and then cut into bars. Makes 30 bars dozen bars.
