We’re all familiar with Pineapple Upside-Down cakes, but this recipe for an Upside Down German Chocolate Cake is a little less so, but it’s just as tasty as regular German chocolate cakes,
and they’re handier to transport to picnics or potlucks. This Cubed Pork Cutlets and Mandarin Oranges
recipe makes a great warm weather main dish and is easy to prepare.
Upside Down German Chocolate Cake
1 box German chocolate cake mix
1 cup coconut
1 cup chopped pecans
1 stick margarine
1 (8 ounce) package cream cheese
3 1/2 to 4 cups powdered sugar
Whipped cream or whipped topping (optional)
Mix German chocolate mix as directed on box.
Sprinkle coconut and pecans on bottom of a greased 9x13-inch pan.
Pour batter over coconut and pecans.
In a sauce pan, melt margarine and cream cheese, then add powdered sugar. Mix.
Spread this mixture or drizzle over top of cake.
Bake at 350 degrees for 35-40 minutes or until done.
Top each serving with a scoop of whipped cream or whipped topping. (optional)
Cubed Pork Cutlets and Mandarin Oranges
6 cubed pork cutlets
3 tablespoons brown sugar
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1 teaspoon prepared mustard
1/4 cup catsup
1 tablespoon vinegar
1 (12 ounce) can mandarin oranges
Brown cubed pork cutlets.
Mix together other ingredients, except oranges, and pour over chops.
Cook, covered, until tender, (about 15-20 minutes). Remove excess fat.
Watch carefully so sauce doesn’t evaporate. Add a little water, if needed.
Add mandarin oranges, including juice.
Serve over rice or noodles.
