Accompanied story, “There’s No Place Like Home,” published 12-5-2013

1 1/2-pound bag baby Yukon Gold potatoes, quartered

3 tablespoons olive oil

1 tablespoon dried rosemary

1 small onion, chopped

2 tablespoons Parmesan cheese

1 garlic clove, minced

Salt and pepper to taste

Preheat oven to 400 degrees.

Coat the bottom of square baking dish with 2 tablespoons olive oil. Add the potatoes and make sure they’re coated with the olive oil.

Add onion, 1 more tablespoon of olive oil, rosemary, garlic, Parmesan cheese and salt and pepper and mix with potatoes. Cover with lid or foil. Bake for 30 minutes. Uncover. Bake for an additional 20 minutes. Remove from oven and let sit for 5-10 minutes before serving. Makes 4 servings.
