Side dishes are often just as important to a meal as the main selection, and potatoes are usually the top choice to accompany an entree. Potatoes can be fixed so many ways, whether baked, mashed or fried.

However, if you’re like me, you’re always seeking new ways to fix potatoes. Here is a recipe for Swiss Onion Potatoes that can be made with either fresh, peeled potatoes or, if you’re in a hurry, shredded, frozen ones you can buy at the store. Either way, they’re great with fried chicken, barbecue, grilled steaks or even hot dogs or brats.

If you have any left over, they’re also great heated again and served with eggs for breakfast the next morning. If you’re family doesn’t like Swiss cheese, which this recipe includes, cheddar can be substituted instead.

SWISS ONION POTATOES

1 tablespoon olive oil

1/2 cup cooked, crumbled bacon

5 cups shredded fresh or frozen potatoes

1 1/3 cups French’s fried onions

1 cup (4 ounces) shredded Swiss (or cheddar) cheese

Salt and pepper to taste

Sour cream, optional

Heat oil in a 10-inch skillet over medium heat. Cook bacon 1 minute. Stir in potatoes, French’s fried onions and cheese. Cook 8 minutes or until lightly browned on bottom.

Loosen mixture and gently invert onto large serving platter. Return to skillet and cook 6 minutes or until browned.

Remove to serving platter and season to taste with salt and pepper. If desired, serve with dollop of sour cream. Makes 4 to 6 servings.
