Years ago when I was in junior high, our school had a fall carnival to help pay for the seniors’ class trip. One of the most popular games at the carnival was the cake walk.
Those who played the game walked around a circle that had been drawn on the floor. The circle was divided into sections, like a sliced-up pie, and each section had a number. Music was played while the participants walked around the circle, and when the music stopped, a number was called out. Whoever was standing in the section that matched the number would win a cake.
Students donated the cakes used in the game, and there was always a big variety. I remember the cake I won at that carnival, and I thought it was the best I’d ever eaten. It was a chocolate layer cake with a marshmallow filling and marshmallow icing.
The following recipe comes close to duplicating the taste of the cake I won all those years ago, even though it’s not a layer cake. Still, the chocolate and marshmallow are delicious together!
S’MORES CAKE
3 milk chocolate candy bars (1. 55 ounces each), broken into squares
1 small (9-ounce) package devil’s food cake or 1-2/3 cups from a regular size package
1 egg
1 (8-ounce) container sour cream
1 (10-ounce) package regular size marshmallows or 4 cups miniature marshmallows
Whole graham crackers, coarsely crushed
Place oven rack in middle of oven, preheat broiler.
Microwave chocolate in a 2-cup container on high for 30-60 seconds, or until mostly melted. Stir until smooth; set aside.
Combine cake mix, egg and sour cream and stir until blended. Pour batter into a glass or ceramic baking dish. Microwave the batter, covered, on high for 4-5 minutes or until center of cake is firm and springs back when pressed.
Remove pan from microwave; arrange marshmallows in an even layer over cake. Broil 30-60 seconds or until marshmallows are golden brown.
Remove from broiler, sprinkle with crackers and drizzle with chocolate.
