We usually think of making candy during the holidays, especially Christmas. But, if you or any of your family members has a sweet tooth, you know the calendar doesn’t make any difference.
During the warmer months of the year, I like to make candy that can be served outside without melting, so chocolate isn’t a good choice. These Orange Nuggets, on the other hand, are great in any weather. They don’t have to be refrigerated, and you can throw some in a plastic bag and take them with you outside for a quick treat. Or, you can pack them in a child’s lunch bag for a treat at school.
This recipe calls for orange slices, which both young and old have loved for many years. The combination of the orange candy and the nuts and coconut make a delightfully delicious treat.
ORANGE NUGGETS
1 pound orange slices candy, cut into small pieces
1 cup nuts, chopped fine
2 cans Eagle Brand milk
7 ounces angel flake coconut
1 teaspoon vanilla
In a medium-sized bowl, combine all the above ingredients in the order given and mix well. Spread onto a cookie sheet that’s been sprayed with cooking spray.
Bake for 30 minutes at 350 degrees. Take pan out of oven and let cool just long enough to handle. Do not let it get cold.
Use a spatula or spoon to remove pieces of candy to desired size. Roll into balls. Immediately roll in powdered sugar.
The candy may be stored in a plastic container or a candy dish with a lid.
