We often think of one-dish meals as a casserole or a stew or soup. However, this meal-in-one comes in a salad, served cold. It is both filling and delicious.
This macaroni salad is a hearty dish any seafood lover would appreciate. However, if you’re not a big seafood fan, you may add another meat or substitute one for the shrimp .

HEARTY MACARONI SHRIMP SALAD
24 ounces medium-size cooked shrimp, tails removed
4 cups cooked medium-size shell macaroni (or elbow macaroni)
1 celery rib, finely chopped
1/4 cup each: chopped red onion, green pepper, and yellow or sweet red pepper
1 cup shredded cheddar cheese
Dressing:
1/2 cup sour cream
1/2 cup mayonnaise
4 teaspoons cider vinegar
1/4 teaspoon dill weed (plus a little more for garnish)
1 tablespoon sugar
1/4 teaspoon black pepper
1/2 teaspoon salt, optional
In a bowl, combine the shrimp (or meat) shell macaroni, celery, onion, peppers and cheese.
In another bowl, combine the dressing ingredients until well-blended. Pour over salad ingredients and toss to coat. Sprinkle with a little more dill weed.
Cover and chill for several hours, before serving. Makes 8 servings.
FRIED DILL PICKLE CHIPS
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
1 cup milk
1 drop or two of hot sauce, optional
3 cups thin dill pickle slices, drained
Oil for deep-fat frying
Ranch salad dressing, for dipping, optional
In a shallow bowl, combine the flour, salt and pepper.
In another bowl whisk eggs and milk and add drops of hot sauce, if desired.
Blot pickles with paper towels to remove any moisture. Coat pickles with flour mixture, then dip in egg mixture; coat again with flour mixture.
In an electric skillet or deep-fat fryer, heat oil to 375 degrees. Fry pickles, about 10 at a time, for 3 minutes or until golden brown, turning once.
Drain on paper towels. Serve warm with ranch dressing if desired. Makes 8 servings.
