It’s funny how generations of families tend to cook the same way. We may add new recipes from time to time, but we usually fix many of the old standbys the same way our mothers’ did and the way their mothers’ did before we came along. Since our grandmothers often threw things together without recipes, it’s sometimes difficult to recreate the dish “like Grandma used to make.”
As peach season rolls around each summer, I’m reminded of one dessert my mom used to make that was her version of Grandma’s peach cobbler. Mom didn’t have the recipe, but over the years of making it so often, she was able to obtain that same great taste. I especially liked the way she fixed it with canned peaches, not fresh, allowing you to enjoy the sweet dessert any time of year and ensuring it always tastes the same. After many trials and errors, I was finally able to continue the tradition and pass my own recipe down through the next couple of generations.
GRANDMA’S PEACH DESSERT
1/2 cup butter, melted
1 1/4 cups sugar
1 cup all-purpose flour
1 1/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup milk
1 teaspoon vanilla
1 (28-ounce) can sliced peaches in heavy syrup
2 tablespoons sugar
1/2 teaspoon ground cinnamon, optional
Cool Whip, or whipped cream or ice cream, optional
Preheat oven to 350 degrees. Pour butter into 2-quart rectangular baking dish.
In a large bowl, combine 1 1/4 cups sugar, flour, baking powder and salt. Stir in milk and vanilla until smooth. Pour over melted butter.
Drain peaches, reserving liquid. Arrange peach slices over batter. Pour reserved liquid over peaches. Do not stir.
In a small bowl, stir together 2 tablespoons sugar and cinnamon. Sprinkle over peaches. Bake about 45-55 minutes or until lightly browned and toothpick inserted into cobbler dough comes out clean.
Top with a dollop of Cool Whip, whipped cream or scoop of vanilla ice cream, if desired. Serves 8.
