Memorial Day usually signals the beginning of outdoor activities and get-togethers with family and friends. It’s also the time to open pools and fire up grills.
However, we mustn’t lose sight of the reason for the holiday and honor the memory of the brave, self-sacrificing men and women who gave all so we may enjoy the freedom and blessings this country offers.
If your plans include sharing snacks or appetizers and cold drinks over the holiday weekend, here are a couple of quick and easy recipes to make, leaving you time to remember those who have gone on before.
GITTY-UP CRAB DIP
1 (8-ounce) package cream cheese, softened
3 tablespoons salsa (your choice)
2 tablespoons prepared horseradish
1 (6-ounce) can crabmeat, drained and flaked
In mixing bowl, beat cream cheese until creamy. Add the salsa and horseradish and mix well. Stir in the crabmeat. Refrigerate.
Serve with assorted crackers.
PIZZA DIP
1 (8-ounce) package cream cheese, softened
1/2 cup pizza sauce
2 cloves garlic, finely chopped
1 teaspoon sugar
1/2 cup chopped pepperoni
1 (2 1/4-ounce) can sliced ripe olives, drained
1/3 cup finely diced red bell pepper
5 medium green onions (1/3 cup), sliced
1/2 cup (2 ounces) shredded mozzarella cheese
1/4 cup thinly sliced fresh basil leaves
Tortilla chips
Set oven control to broil. On a 12- or 13-inch round ovenproof serving plate, spread cream cheese in a thin layer. In a small bowl, mix pizza sauce, garlic and sugar; spread over cream cheese.
Top with pepperoni, olives, bell pepper and onions. Sprinkle with mozzarella cheese.
Broil with top 4-inches from heat for 1-2 minutes or until mozzarella cheese is melted. Sprinkle with basil leaves.
Serve immediately with tortilla chips.
